Simply Nutritious Turkey Breakfast Cups



Hi, guys... It's Kenzie!

My family is busy, just like yours. My husband is in the Navy and leaves for work every morning at 5:30 a.m., so we are all for quick and easy breakfasts. This is a new favorite at our house- Turkey Egg Cups. I made these on Sunday morning, and Monday he was able to grab two and head out the door. Man, I love meal prep, because this mama got to sleep another ENTIRE hour (can I get an amen?!)!

To make a recipe a staple at our house, it has to be nutritious as well, and I've attached the nutritional info at the bottom, so you can see for yourself! But, here's a hint 12 g of Protein!!!

Ingredients:
  • 12, 1- oz slices of Low Sodium, Deli Turkey

  • 1/2 cup, Low Fat Shredded Cheese

  • 1/4 cup finely chopped green onion

  • 12 eggs

  • Salt and pepper to taste

Instructions:
  • Preheat Oven to 400 degrees

  • Spray muffin tin

  • Place a slice of turkey in each muffin cup

  • Divide Cheese and Onion among cups

  • Crack an egg on top

  • Bake 18-20 minutes, depending on desired firmness of the egg

* 1 egg cup is a serving, so you have enough for the entire week depending on the size of your family!
Nutritional Info: 105 Cal, 1 gram Carbs, 6 grams Fat, 12 grams Protein
