Lauren's Holiday Wassail

So a few years back around this time a couple friends of mine were getting engaged, and I was the photographer. My friend Adam and I planned to take his soon to be finance to a Christmas Tree farm to pick out a beautiful tree, little did she know, I would be there to capture his sweet proposal.

Afterwards, his mom and I had planned an engagement party for their close friends and family. His mom had this delicious warm and fruity delight in the kitchen, brewing in the crockpot. Y'all... I think I drank the entire batch myself!

I had to have the recipe, because anyone that knows me, knows I drink orange juice like it's going out of style. I've lost the recipe over the years, but I conjured up my own this Halloween and I thought I'd share it with you! I hope it's a new addition to your Thanksgiving table and your loved ones enjoy it as much as our family does.

Ingredients:

  • 5 Cups Apple Juice

  • 1 Cup Orange Juice

  • 1 Cup Pineapple Juice

  • 1 Cup Peach Nectar (or Cranberry Juice)

  • 3 Cinnamon Sticks

  • 1 Tbsp of whole Cloves

  • 1/2 tsp ground cinnamon

  • 1/2 tsp ground nutmeg

  • Garnish: Orange slices and Cranberries

  • Want to spike it? Add a cup of brandy, rum, or calvados

Instructions:

  1. Put all ingredients in crockpot and turn to high for at least 2 hours.

  2. Enjoy!

The longer it sits and heats, the better.

Kenzie's Favorite Pumpkin Spice Latte


Y'all I just want to be honest, I am not a big fan of pumpkin spice lattes, BUT this one I love! My problem isn't the pumpkin part, I just love coffee when it tastes like coffee. My best friend, Emily on the other hand waits all year for pumpkin spice. This recipe is one we both love, so no matter where you are on the coffee:cream spectrum, we got you!

We have been making and perfecting this recipe since our Sophomore year of college (4 years!). It started with a pin on pintrest, like any good recipe these days. If you are interested in the original, it's on the "Creative Homemaking" blog.

Ingredients:

  • 6 cups oat milk (you can use skim, 2%, or whole milk)

  • 6 cups Brewed coffee (Dunkin Donuts Pumpkin is our go to)

  • 1/2 c. canned pumpkin puree

  • 3 tbsp. vanilla extract

  • 1/2 c. sugar (more or less depending on desired sweetness)

  • 2 tsp. ground pumpkin pie spice

  • 3 cinnamon sticks (optional)

Instructions:

  • Combine the coffee and milk in your crock pot.

  • In a small bowl whisk together pumpkin, vanilla extract, sugar, and ground cinnamon, until pumpkin is well blended. Then add to crockpot.

  • Add Cinnamon Sticks if using and let simmer 2-3 hours.

*Note: it is not great reheated, so I would suggest using it in one sitting or dividing the recipe to refrain from having leftovers.

*Yields: 10-12 servings depending on mug size

I have one more recipe I want to share with you, I know it isn't a crockpot recipe but it takes 10 minutes to make! Also, I am a sucker for cooking with essential oils! I found this recipe while looking for was to do just that, all the credit goes to Erin, an Author for the site "Cooking with Essential Oils".

Erin's Peppermint Mocha

Ingredients:

  • 2 cups milk – 2%, coconut milk, almond milk, soy milk

  • 2 cups brewed coffee

  • 2 Tbsp cocoa powder

  • 1/4 cup sugar (this could be adjusted/reduced to taste)

  • 1 to 2 drops Peppermint Vitality essential oil

  • Optional toppings: whipped cream, chocolate syrup drizzles

Instructions:

  • In a small saucepan, heat the milk and whisk it vigorously as it starts to bubble. Pour in the brewed coffee.

  • In a small bowl, whisk together the cocoa powder and sugar. (I don’t recommend adding the cocoa directly to the saucepan without mixing it with the sugar because it will clump and not integrate well with the coffee-milk!)

  • Whisk in the cocoa-sugar mixture into the milk-coffee mixture, until creamy mocha forms.

  • Pour into 2 coffee mugs and add 1 to 2 drops Peppermint essential oil per mug, to taste. Stir with coffee stirrer and sip away!
