Lauren's No Bake Crab Mac and Cheese

One of the first meals as family of 3 was my Crab Mac + Cheese. My boy loves mac and cheese, but he said this was his favorite ever! That made my Mama heart happy for sure, because there's nothing like making food for your family with love and how food speaks to a boy's heart... and stomach, right?
It's super simple and you can incorporate your faves and simple box hacks, if you'd like but this is short and easy and homemade, so dig in!
Ingredients:
1 box of your fave macaroni noodle (we love cavatappi) cooked to box instructions
3 different cheeses in 8 oz increments: we like Shredded Hickory Smoked Cheddar, Shredded Sharp Cheddar, and a mild, soft cheese, such as Velveeta
2 cups half-and-half
2 cups milk
1/2 teaspoon kosher salt, plus more to taste
Pinch garlic salt
Pinch pepper
1 package of Imitation Crab
1 1/2 Tbsp Ole Bay Seasoning
Instructions:
Cook the macaroni according to the package directions. Drain and reserve.
Reserve 2 tablespoons each of the smoked Cheddar, sharp Cheddar and mild cheese to sprinkle over the macaroni and cheese at the end.
Combine the half-and-half, milk, 1/2 teaspoon kosher salt, garlic salt and pepper in a large pot and place it over medium-high heat. Bring to a low boil and gradually whisk in the remaining smoked Cheddar, sharp Cheddar and mild cheese, stirring to make a creamy sauce.
Mix in the macaroni and season with kosher salt to taste.
Add in imitation crab and Ole Bay Seasoning.
Pour into individual dishes and top with the reserved smoked Cheddar, sharp Cheddar and mild cheese. To melt cheese quickly, place in oven on baking sheet if desired for 2-3 minutes.
Sprinkle with a little Ole Bay Seasoning and Parsley.
A little tip:
While you're at it, pick yourself up some Red Lobster Cheddar Bay Biscuit mix from the dry baking goods section in your local grocery store. It's the perfect side to go with your mac and cheese. You'll thank me later ;)
