Chili for Fall Days

My little family is from Tennessee and we long all year for fall. We anxiously await the cool, crisp air, falling leaves, and foggy mornings. My husband loves fall even more than most. He waits year-round for Panera to release their seasonal menu which includes (drum roll) Turkey Chili. I mean the man can eat the group serving. So, as the good wife that I am, I decided to learn to make it. It started with the copy-cat recipe but I kept toying with it to find the perfect combination. I like my chili spicy, full of veggies, and soupy. David likes it more traditional and thicker, needless to say I had my work cut out for me. I hope you enjoy it as much as we do!
Ingredients:
1 Tablespoon olive oil
1 medium yellow onion(chopped)
1 medium red bell pepper(chopped)
2 teaspoons minced garlic
1 pound lean ground turkey
2-3 Tablespoons chili powder(more to taste)
1 1/2 teaspoons ground cumin
1 teaspoon kosher salt (more to taste)
1 teaspoon dried oregano
1-2 cups chicken broth(depending on how thick you like your chili)
30 ounces petite diced tomatoes(two 15 oz cans)
15 ounces dark red kidney beans(drained and rinsed)
15 ounces black beans (drained and rinsed)
15 ounces white chili beans(drained and rinsed)
1 1/2 cups corn (canned or frozen, optional)
Instructions:
Heat the oil in a large pot over medium heat.
Stir in the onion, peppers and garlic.
Cook for 5 minutes, or until the onions become translucent.
Add in the ground turkey and cook until lightly browned. Drain if needed.
Stir in seasonings.
Next add in the chicken broth, tomatoes and beans.
Add corn if desired.
Bring turkey chili to a boil and then reduce the heat and simmer for at least 30 minutes.
The longer the better. Taste and add more salt and seasonings if desired.
We also want to share Lauren's easy Hamburger Chili with you. It is as follows:
Ingredients:
1 Tablespoon olive oil
1/2 medium yellow onion(chopped)
1 - 1.5 pound ground hamburger meat
1 Tablespoons chili powder(more to taste)
30 ounces stewed tomatoes(two 15 oz cans)
30 ounces dark red kidney beans(drained and rinsed, two 15 oz cans)
30 ounces Busch Chili Beans(two 15 oz cans)

Instructions:
Heat the oil in a large pot over medium heat.
Stir in the onion and cook until translucent
Add in the ground hamburger and cook until lightly browned. Drain if needed.
Stir in seasonings (chili powder & salt and pepper tp taste).
Add beans and tomatoes.
Bring chili to a boil and then reduce the heat and simmer until desired thickness.
