Rosemary Essential Oil Dinner Recipes

I decided to try something NEW and FUN! I decided to try to use the essential oil of the month in an entire meal, luckily for me our oil this month is Rosemary, which made it super easy.

I don't know if you are familiar with cooking with essential oil, I am just a beginner, so I won't pretend to have all the tricks. I do know that essential oil is SO much stronger than dried herbs or spice packets, so heads up on that. I read many recipes about using Rosemary in a marinade, but I was a little tentative about how long to let it sit. I did not want to overdo it.

I decided to keep things really simple with the chicken and just made a rub.

Rosemary Essential Oil Rub

Ingredients:

1/3 cup of Olive Oil

1 Tablespoon of Dried Oregano

Directions:

I used this on 2 chicken breasts, so nothing crazy!

Let sit for about 30 minutes long enough to prep your potatoes and let the oven preheat.

Bake the chicken on 375 for about 25 minutes, make sure the juices run clear and that the internal temperature is 165 degrees Fahrenheit.

To go with the chicken, I made the rosemary potatoes that we shared in the Oil of the Month Blog.

Rosemary Potato Recipe


Ingredients:

1.5 pounds potatoes

1 head of garlic

1 T olive oil

2 drops YL Rosemary EO

Salt to taste

Directions:

Heat oven to 425 degrees. Wash & dry potatoes, then cut into bite size pieces. Take apart the head of garlic so each clove is separate. Leave garlic skin on. Toss potatoes, cloves of garlic, & olive oil mixture together until evenly coated throughout. Place cookie sheet in heated oven for about 10 minutes. Flip cook another 10-15 minutes.

French Bread with Rosemary Oil

On the side we toasted pieces of french bread to dip in an olive oil, balsamic vinegar, and rosemary essential oil mix (just a couple drops). It was wonderful, and super easy to make.
