Day 5 Back-to-School Freezer Meal: Super Stuffed Poppin' Peppers

This week, we have created daily blogs for Back-to-School Survival Week Freezer Meals. These fun meals can be frozen and help you prep for the back-to-school madness.

Super Stuffed Poppin' Peppers:


Serves: 4

Prep to Freezer Time: 15


Cooking Time: 6-8 hours

INGREDIENTS

1 lb ground beef

1/2 yellow onion

2 cloves of minced garlic

4 medium to large bell peppers

1 jar of your favorite Mexican salsa

1 cup shredded cheese

INSTRUCTIONS:

  1. Cut pepper tops off and remove seeds.

  2. In large mixing bowl mix meat, onion, garlic, and 2 tablespoons of salsa.

  3. Separate mixture into four equal parts and firmly stuff into peppers.

  4. Add remaining sauce to a quart-sized plastic freezer bag, seal, and place inside gallon-sized bag with stuffed peppers. Freeze.

  5. When ready to cook, thaw freezer bag. Place peppers in an olive-oil-coated slow cooker and top with sauce. Cook on “low” setting for 6-8 hours.

  6. Top with cheese 20 minutes before removing to eat.
